Easy Chicken Wraps
This is the perfect recipe for those nights when you just want to throw an easy meal together with no fuss. These wraps are simple, easy and delicious.
What you need:
-1 BBQ chicken (alternatively you can bake 2 or 3 organic chicken breast fillets for 30minutes on 180 Degrees Celsius)
-1 can of 4 bean mix
-1 can of crushed tomatoes
-2 tablespoons of tomato paste
-1 teaspoon of cumin
-1 teaspoon of paprika
-1 teaspoon of chilli flakes
-Organic wraps (lettuce leaves if you would prefer a gluten free recipe)
-2 large tomatoes or 8 baby tomatoes sliced
-1 grated carrot
-1 sliced avocado
What you need to do:
- If you are using a BBQ chicken, cut of the amount of meat required. Use a fork to shred the chicken. If you have baked your chicken, do the same. Then set meat aside in a bowl.
- In a saucepan on a low heat, add the can of tomatoes, beans, tomato paste, spices and stir for 5 mins.
- Add chicken and then add salt and pepper to taste and continue to stir for another 5 -10 minutes or until sauce is hot. Pour into a separate bowl.
- Pop wraps (or lettuce leaves) on a plate and top with chicken, carrot, tomato and avocado then roll up and serve.Enjoy x
