Paleo Bread

Lately all I have wanted to eat is peanut butter on toast! As I am gluten intolerant, I came up with this awesome recipe which completely satisfies my craving. This gluten free bread recipe that is packed with protein. My favourite way to eat this delicious bread is toasted with tahini or peanut butter and sprinkled with Himalayan sea salt, yum!

What you need:

2 cups almond meal

1 cup arrowroot flour

2 cups grated carrot(can be blended in food processor or thermomix)

2 tbs chia

1 tsp bicarb

3 eggs

2 tsp apple cider vinegar

1/3 cup coconut milk

Handful of pepitas

1 tsp salt

1 tsp pepper

 

What you need to do:

Preheat oven to 180degrees.

Mix everything together (I just threw everything into my thermomix)

Pour into lined loaf tin.

Bake for 1 hour.

Let cool (or be impatient like me and eat straight out of the oven) slice, add your favourite toppings, eat and enjoy!
