Guilt Free Choc Chip Cookies

-Dairy Free – Gluten Free – Refined Sugar Free-

What you need:

1 ½ cup of raw cashew nuts

½ cup of organic coconut oil

1 cup of dried coconut (desiccated or flakes)

1/4 cup of cacao or unsweetened carob (carob does not contain caffeine so it is perfect if you are sensitive to cacao like me)

2 eggs

2 tablespoons of coconut sugar

¼ cup of cacao nibs (optional)

What you need to do:

Preheat fan forced oven to 180 degrees Celsius, prepare an oven tray with baking paper.

In a high powered food processor (I used my thermomix) place cashews and coconut and blend until smooth, add remaining ingredients and mix again until well combined. Add cacao nibs and mix on a slow speed.

Roll cookie dough into 12 balls and place on a tray and press down with a fork to flatten. (as shown in picture above)

Place in oven and cook for 15 minutes.

Allow to cool before serving.
